Mango Muffins

When in Uganda, and peaches are not readily available- go with mango!  Yummy and perfect for breakfast or tea time!  Enjoy!

Peach Mango Muffins

Adaptations- Kelly Hallahan
Makes 12-15 muffins
Oven Temp: 400°

  • 1 egg, beaten
  • 1 c. milk
  • ¼ c. oil
  • ½ teaspoon salt
  • 2/3 c. sugar
  • ½ teaspoon vanilla
  • 2 teaspoons lemon juice
  • ½ teaspoon ginger
  • 1/4 teaspoon cinnamon
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 cup peeled and diced mango.

Blend all liquid ingredients together. Add dry ingredients and stir until just moistened. Gently fold in peaches. Fill muffin cups 2/3 full. Don't overfill! Bake 20-25 minutes. Makes 15 average sized muffins.
